Abstract
My transdisciplinary research explores the role of chefs (any skilled professional who is responsible for and has a specialised knowledge of sourcing and transforming ingredients for human consumption) as change agents for food system transformation, applying a circular economy lens as a framework for sustainable food systems – i.e., a food system where waste is designed out. This poster presentation will focus on the “Circular Menu Design” scale I developed for the second phase of my Vermont-based study exploring the relationships, values, and practices of chefs that may contribute to accelerating a circular economy for food.
