Abstract
This presentation is an exciting combination of visual depictions of food system resilience and academic research. The visuals explore and pay tribute to the adaptation strategies used throughout the COVID-19 pandemic, and perhaps most importantly, the people and organizations behind them. All images are based on photos provided by different Chittenden County-based food organizations. The project aims to integrate the arts into food system work more closely, with the hope of inviting others to join the conversation. Please note, many of these paintings are still works in progress. The visual component is complemented by a short presentation on related work in food system resilience, specifically focusing on Anchor Institutions' (AI) role in maintaining food system resilience throughout the COVID pandemic. Expanding on the traditional roles of AI, this research highlights how these institutions contribute to food system resilience in numerous capacities beyond procurement.
