Abstract
This 12-page article summarizes how and why a local food hub in southeastern Vermont was established, and how it changed over time. Started as the informal Windham Food and Farm Network, the food hub had sales of $10,000 in 2009. The Food Hub became a non-profit organization called Food Connects in 2013. By 2025, annual sales reached $4 million. Along the way a variety of dedicated people in schools, on farms, and in agencies and organizations played key roles in helping the food hub adapt, evolve, and grow.
