Effect of Full-Fat Yogurt Consumption on Plasma Lipoprotein Profiles

Abstract
The objective of this research was to characterize the plasma lipoprotein profiles in participants consuming a diet with either full-fat (3.25%) or non-fat yogurt. We conducted a pilot trial with 13 participants with prediabetes using a randomized crossover design with two 3-week diet periods where three daily servings of full-fat or non-fat yogurt were consumed. Blood was collected on the last day of each diet period and plasma lipoproteins were analyzed using nuclear magnetic resonance spectroscopy. This study serves to compare the plasma lipoprotein profiles in participants with prediabetes to specifically clarify the metabolic eGects of dairy fat consumption.
