Whey Protein Isolate Composites as Potential Scaffolds for Cultivated Meat

Abstract
The rising global population and increasing prevalence of food insecurity brings a need for alternative food sources, to support the global food supply. Cultivated meat is a new area of biotechnology that uses cells from living animals to create protein products. Our research focuses on using sustainable materials, namely whey protein isolate (WPI), in the manufacture scaffolding for cultivated meat production. Scaffolding is the framework in which cells are grown into meat products. Our findings have supported our hypothesis that by utilizing WPI in cultivated meat manufacture we can create a nutritious material that increases overall cell health and proliferation.
